What You'll Need
4 Keller Meats Scallops (approximately 6-7 ounces)
2 slices Keller Meats bacon (or 4 if you love bacon)
50 g strawberries
1 hot pepper of choice
⅛ tsp red pepper flakes
1 tbsp tequila or chicken stock
⅛ tsp salt
Make the marinade (Puree all marinade ingredients together) and place scallops in marinade.
Refrigerate for 2-4 hours. Remove from the fridge.
Slice bacon lengthwise if using 2 slices.
Wrap bacon around the scallops and secure with a toothpick.
Place in smoker for 20-30 minutes until scallops are almost cooked through.
Remove from smoker. Heat a cast iron skillet (or regular skillet) and sear scallops.
Suggested serving: over zucchini noodles sauteed with garlic, cilantro, and avocado.
